Butter for frying

1 Combine flour, sugar, carrot and apple in a large bowl. Whisk in egg and milk
together until well combined and pour into flour mixture. Stir gently until batter is
smooth.
2 Melt a little butter in a frying pan over medium heat. Spoon tablespoons of mixture
into pan, cook for 2 minutes or until bubbles start to appear on surface. Turn and cook
for a further minute until cooked through. Remove to plate, cover to keep warm.
3 Repeat with remaining batter, greasing pan regularly with butter. Serve pikelets
sprinkled with sugar and lemon wedge on the side.

I just used brown sugar instead on caster and added cimamon. no sugar on top after they were sweet enough. i tested the carrot first to make to sure it was a sweet one
